The basic starting point for many Japanese dishes consisting
of sweetened vinegared rice.

INGREDIENTS FOR 4 PEOPLE
RICE
- 1 1/3 Cups Japanese rice
- 11/2 cups water
VINEGAR MIXTURE
- 21/2 - 3 tablespoons rice vinegar
- 2 -3 tablespoons sugar
- 1 1/2 teaspoons salt

COOKING INSTRUCTIONS
- Ideally the rice should be cooked in
a rice-cooker. This gives consistently good rice.
- Alternatively
cook the rice in a pan with a tight fitting lid on a low heat and allow
to stream. You may need to experiment with timings.
- Either
way the rice should be slightly harder than usual so that it can absorb
the vinegar mixture.
- To make
the mixture dissolve the sugar and salt in the vinegar by warming in a pan
over a low flame. Do not boil.
- Add
about 1/3 of the mixture "folding" it gently into the rice.
- The
rice should be sticky but not wet.
- If necessary
add more mixture to reach the correct consistency.
- Keep
covered and use within a few hours
